In this work we present the cosmological dynamics of interacting dark energymodels in the framework of particle creation mechanism. The particle creationmechanism presented here describes the true non equilibrium thermodynamics ofthe universe. In spatially flat Friedmann-Lema{\^\i}tre-Robertson-Walkeruniverse considered here, the dissipative bulk viscous pressure is due to thenon conservation of particle number. For simplicity, we assume that thecreation of perfect fluid particles to be isentropic (adiabatic) andconsequently the viscous pressure obeys a linear relationship with particlecreation rate. Due to complicated nature of the Einstein's field equations,dynamical systems analysis has been performed to understand deeply about thecosmological dynamics. We have found some interesting cosmological scenarioslike late-time evolution of universe dominated by dark energy which could mimicquintessence, cosmological constant or phantom field through a dark matterdominated era. We also obtained a possibility of crossing the phantom divideline which is favored by observations.
