Labneh is a concentrated yogurt widely produced and consumed in the Middle Eastern countries and Balkans.This review focuses attention on the different manufacturing methods of labneh and its quality in terms of microbiology, rheology, sensory and nutrition. The shelf life of this healthy milk‐derived product is also discussed in this review.
