Comparison of a laboratory butter reworker with a Westfalia industrial reworker

Bulk butter was subjected to reworking by an industrial and a small‐scale reworker. Samples were examined by visco‐elastic rheometry in oscillatory mode. The shift in storage modulus on reworking was estimated and compared to the total applied shear (TAS) in the reworking operations. The relationship between TAS and rheological changes was similar for the two reworking systems, providing both a confirmation of the applicability of the laboratory reworker for examining butter reworking and the potential for modification of butters in the reworking process.
