This paper considers the use of plant protein as an alternative or supplement to animal protein in the attempt to balance the world's protein supply with the increasing world population. The evaluation of the quality of plant proteins using chemical and mathematical methods is considered. The paper shows how plant proteins can complement each other when combined in recipes developed with the aid of a computer programme.
