The purpose of this study is to explore the effects of a cottonseed oil (CSO) rich diet on glucose, serum lipids, and other biomarkers of metabolic syndrome. Thirty two healthy adults (aged 18–40) consumed a CSO rich diet. For one week participants consumed apple juice, muffins, chicken strips, French fries, and a milkshake (95 g CSO and 855 kcal daily). Participants supplemented the diet with their usual foods. Anthropometric measurements were done, and blood was drawn pre‐intervention and at the end of the study. Serum lipids: total cholesterol (TC), high density lipoprotein (HDL), low density lipoprotein (LDL), triglyceride (TG), and glucose concentrations were assayed. There was no difference in pre weight (150.5 lbs±26.4) and post weight (150.9 lbs±26.2) among participants. BMI (Pre:24.1±3.0; Post:24.2±2.9) was unaffected, as was waist circumference (Pre: 31.2 inches±3.5; Post: 30.9±3.5). Analysis of serum lipids showed no difference in HDL (Pre: 49.8±12.0; Post: 48.9±12.2) or TG (Pre:79.3±50.7; Post: 90.5±79.7). Total cholesterol and LDL cholesterol were significantly reduced. (TChol Pre: 175.4±31.9; Post: 165.6±27.6*; LDL: Pre: 109.7±30.4; Post: 98.7±23.6*) Consumption of a high CSO diet for one week had no effect on anthropometric measurements, HDL, TG or glucose levels. LDL and total cholesterol were significantly reduced. Funded by the Texas Department of Agriculture.
