Reaction of carbohydrates with long‐chain plantderived lipids yields carbohydrate‐alkyl ester surfactants with a polyol structure. Their renewability, low cost, and environmental acceptability make carbohydrate‐alkyl ester surfactants an excellent alternative to petrochemically derived products.
