Lipid is removed from beer by binding to a cellulose matrix (Preptube). This permits comparison of foam stability in the presence or absense of lipid thus showing whether the latter causes the poor foam. Unlike previous methods of lipid extraction, Preptubes do not remove foam‐stabilising materials such as isohumulones and peptide.
