Micromalting and the subsequent development of a 30‐ton single‐vessel malting system are described. The micromalting variables of modification degree and intensity at different moistures and temperatures with various root killing steeping sequences are discussed. These are shown to be essential physiological guides to running this static malting, which is constructionally and operationally simple. The importance of greater understanding of the pneumatic behaviour of grain beds is stressed.
