Isolation and identification of two β‐carbolins in roasted chicory roet. Two β‐carbolines, harman and norharman, have been isolated from roasted chicory roots by solvent extraction and chromatography on alumina. They have been identified by chromatographic and spectroscopic techniques in comparison with reference compounds.
