前報と同じ献立を用いて調理前後のCa含量を比較した結果, 7日間を通じて調理後かなり減少を示した。 Caは前報のFeに比して損失率は低いが, 摂取量そのものが遙かに下回り, 特に和食においては所要量の54%のみを摂取したことになっている。 洋食はわずかながら上回っている。 このように和食の方が摂取量が少ない上に, 損失率が大であった。 これは洋食は和食に比して, 肉類や牛乳および乳製品を用い, その付合せとして新鮮な野菜や果物を用い, またサラダや食後のデザート, スープの中に上記のごときCaを多く含む食品を用いたためであり, 朝食にはミルク, オートミールを毎日用いるなどのことがCa摂取量の多くなる主原因であると思われる。 和食では味噌汁や大豆製品また, 鱈でんぶ, 小魚やえびの佃煮, 昆布, 若布, 煮干などのごとき和食特有の食品中にCaを多く含有している。 しかし, Caの吸収率は平均30-50%であるとの報告5) -7) があるので, これらのみにたよることなく更に食品の選択と共に調理法の検討がCaにおいても前報のV. CおよびFe同様重要であるといえるであろう。
