The objective was to evaluate the physical-chemical and microbiological quality of raw milk and the prevalence of bovine mastitis in a dairy farm in the municipality of Mossoró-RN. For this, four visits were made, where a check list was applied to evaluate the procedures on the property, in addition to sample collections. Swabs were collected from different points of contamination, samples of milk and water, for research of coliforms at 35 and 45oC and viable strict and optional mesophilic microorganisms. In addition, milk was evaluated for physicalchemical quality. Milk showed high contamination for mesophilic bacteria in 50% of the samples and coliforms were present in all milk samples. The presence of these bacteria was observed in swabs and water. The milk presented within the parameters required by the current legislation regarding physical-chemical analysis. As for the possible points of contamination, it was found that, with the exception of the liners, all other points contributed to the contamination of milk in at least one of the microorganisms surveyed. It was observed that 52.3% of the points covered were in accordance with the literature regarding the procedures adopted on the property. The CMT identified that 55.9% of the analyzed rooms had subclinical mastitis and the use of the screened cup showed that the frequency of clinical mastitis was 2.38%. The examination of milk identified bacteria of the genus Staphylococcus spp. and Bacillus spp., and fungi of the genus Aspergillus spp., Penicillium spp., Trichoderma spp. and yeast. As for the sensitivity profile of the isolates identified as Staphylococcus spp., Higher levels of resistance were observed for Ceftriaxone, Ampicillin, Amikacin and Tetracycline and higher levels of sensitivity for Levofloxacin, Imipenem and Gentamicin. In relation to Bacillus spp. the sensitive antimicrobials were Imipenem, Gentamicin and Levofloxacin. No antibiotic residues were detected in the milk analyzed by the method used. Thus, there is a clear need for the adoption of good production practices on the farm in order to improve the microbiological quality of milk, and it is also necessary to monitor mastitis and adopt preventive measures to reduce the incidence of the disease on the farm. dairy.
