Lactic acid bacteria (LAB) are generally Recognized As-Safe (GRAS) and produce antimicrobial compounds called bacteriocin. One of the LAB genera is Enterococcus and produces a bacteriocin called enterocin. The purpose of this review is to examine the source and role of Enterococcus as a probiotic, antimicrobial and biopreservative. The results of the study of various reference articles show that, Enterococcus can be found from various sources and the Enterocin produced can be used as an antimicrobial, biopreservative and probiotic. Conclusion: the use of Enterococcus as a probiotic and biopreservative is often disputed.
