樹液から分離した酵母902株を用いて,少量高糖生地膨脹力試験法により高糖生地を充分に膨脹させ得る耐糖性酵母の検索を行った。その結果,対照としたパン酵母,Saccharomyces cerevisiae SANK 50981よりも高糖生地の膨脹力が優れている菌株,SANK 50268を見出しS. roseiと同定した。また,本菌株が対照株より強い耐糖性を有することを明らかにした。さらに,本菌株はイースト工業会法の高糖生地膨脹力試験法のショ糖30gをブドウ糖15gと果糖15gを混合したものに代えた非常に浸透圧の高い生地を充分に膨脹させ得ることを見出した。
