Pulses are major source of supplementary protein to daily vegetarian diet, these are regarded as poor man’s meat. They provide energy, essential minerals and vitamins. Pulses are major source of plant protein and carbohydrates. Other nutrients like Phosphorus, Minerals, Vitamin C, Riboflavin and essential Amino acids are also major constituent. Pulses contain more calcium and iron than cereals. They contain 22-24% protein, which is almost twice the protein in wheat and thrice that of rice.
