Alldatawereconfirmedby theplatecountmethodandimmediateinterventionswereundertakeninrisksituations,  concerningnotperfectly cleanedsurfacesandcross-contamination betweentheareasfordifferenttypesoffoods. Variousdepartmentshave beenchecked:  coldstores,  rawfoodmanipulationareas,  kitchens,  coolers,  andpackagingareas.  Criticalsituations wererevealedinthefreshfoodscoldstorageareas, whichwereconsequentlytreatedbymoreintensivecleaningpro - cedures, andtherawfoodmanipulationareas, whichwerephysicallyseparatedbywalls, weremoreintensivelycleaned withexchangesbetweenthevariousareasstrictlyregulated.  Interventioneffectivenesswasconfirmedbyrepeated controlsusingportableATPassay, sincetheevaluationoftherelationshipbetweenCFUandRLUgavegoodresults, withanr 2 valueof 0.83.
