ThecontentsofmajorS-alk(en)ylcysteinesulfoxides (namelyalliin, methiinandisoalliin) weredeterminedinasetof 58variousgarlicgenotypes(22floweringplantmorphotypes, 14semiboltingplantsand22scapeabsentmorphotype plants), representingthegarliccollectionofthealliumgenebankintheCzechRepublic. Theplantswerecultivatedin foursuccessiveyears(2005-2008) andanalysedimmediatelyafterharvestandsubsequentlyaftereightweeksofstor - ageat 5°C. Thetotalcontentofthethreecysteinederivativesinfreshsamplesvariedconsiderablybetween 3.35mg/g freshweighand12.77mg/gfreshweight, withthemeanof7.50mg/gfreshweightandtheaveragerelativeproportions ofalliin/methiin/isoalliinof 83/16/1. Upon 8-weekstorageat  5°C,  theaveragetotalamountofS-alk(en)ylcysteine sulfoxidesincreasedby 30%to 9.75mg/gfreshweight, withthealliin/methiin/isoalliinratiochangingto 82/14/4.The dataobtainedwerestatisticallyevaluatedusinglineardiscriminationanalysistodistinguishthedifferencesbetween theyearsofharvest, betweenfreshlyharvestedandstoredsamples, andbetweentheindividualmorphotypes. While theyear-to-yeardifferencesbetweenthesampleswerestatisticallynotverysignificant, thefreshandstoredsamples aswellastheindividualgarlicmorphotypesdifferedconsiderablyinS-alk(en)ylcysteinesulfoxidecontent. Ourresults indicatethatthecontentofS-alk(en)ylcysteinesulfoxidesprimarilydependsonvariousgeneticfactorsandpost-harvest storageconditions, whereastheclimaticconditionsduringthegrowth(e.g.temperature, irrigation) influencetheir leveltoalesserextent.Variousimplicationsforthefoodandpharmaceuticalindustriesarediscussed.
